Coconut Granola

This granola is a great grain-free option addition to your yogurts, Shakeology, dairy-free ice cream, or even eaten straight out of your hand!

Coconut Granola
Yields1 Serving

 2 cups Coconut Flakes
 ¼ cup Flax seeds
 ½ cup Slivered almonds
 ¼ cup Unrefined coconut oil
 ¼ cup Honey
 ¼ cup Dried Cherries (or cranberries)

Preheat oven to 325 degrees F. Place parchment paper on the bottom of a cookie sheet.

Mix everything together. Spread out on parchment paper. Place in oven for 10 minutes. Stir and turn cookie tray 180 degrees. Bake an additional 10 minutes until golden brown. (Watch closely because the granola will brown quickly.)

Remove from the oven and let cool for 30 minutes. Store in airtight canister for up to 7 days.
