I’m like the cookie monster – put a plate of cookies in front of me, and I’ll gobble them down! These cookies are a healthy and quick alternative – full of protein, lower in calories, fat and sugar; and you don’t have to turn on the oven!
Combine all ingredients in a medium sized bowl.
Mix until a dark brown dough forms.
Using a tablespoon cookie scoop or melon baller, svoop out equal portions of Shakeology cookie “dough.”
Roll scooped “dough” into balls and refrigerate for at least 20 minutes.
Using a flat surface (such as the bottom of a glass), press each ball of cookie dough ball into cookie shaped discs. (If dough sticks to surface, use parchment paper).
Keep refrigerated.
