Craving French fries but don’t want to be derailed from your healthy eating? These carrot fries are guilt-free, vitamin-packed, and can be enjoyed as a savory snack or a side to any meal.
Preheat oven to 325 degrees and cover baking sheet with parchment paper.
Peel and slice carrots into French fry-sized pieces (about 3 inches long and ¼ to ½ inch thick).
Toss carrots in a bowl with olive oil, salt and pepper.
Arrange carrots in a single layer on baking sheet.
Bake for 15 minutes. Then turn baking sheet and stir carrots. Bake an additional 10 minutes. Carrots should brown and look a little caramelized. They should be crisp on the outside.
Serve immediately with ketchup, your favorite sauce, or plain!
